Regionalisation
“This has become a really big thing for consumers in Scotland”, says Mark, “where food is from and, especially, whether food and ingredients have been sourced locally and responsibly is influencing dining decisions like never before. Having personally visited one of the many Kepak farms in Dublin, I can say from experience that we have rigorous standards and that we pride ourselves in every step from farm to fork”

Personalisation
“Of course, this is big all over the UK but we are seeing this trend become as big in Scotland as it is anywhere else in the home nations. Offering customers their own say in how their food looks, how it tastes and what it’s prepared with help formulate an experience, rather than just a meal. This is what your diners are willing to pay the extra money for”.

Serve up a spectacle
“There are a lot of great places offering fantastic food. You may well have your food offer down to a tee, but one thing Scottish diners are really calling out for is a bit of style in the way their food is presented. Getting your food right is one, admittedly very important, part of the puzzle, but unless it is served correctly, you’re missing a trick. Slate plates and wooden serving boards are all popular options that will give your food offer the look it deserves.”
A little bit of effort goes a long way and with Scottish consumers crying out for aesthetic services, you’re falling at the last hurdle by taking short cuts on presentation. A small amount of effort will go a long way – all the way through the realms of Instagram, Facebook and Twitter, in fact.
